Prawn and Mango Kebabs

Parmesan-Crumbed Lamb Cutlets

16cm Skewers
Large Raw Shelled Prawns
Fresh Mango
Red Chilli (Finely Chopped)
Coriander (Chopped)
Garlic (Optional)

For a light starter or a canape; prawn and mango kebabs could not be simpler and look so delicious with their grill striped from being cooked in the AGA cast iron grill pan.

1. You will need some 16cm skewers. Thread two large raw shelled prawns separated with a chunk of fresh mango onto each skewer.
2. Brush over with oil, sprinkle with finely chopped red chilli, chopped coriander and season. You might like to add some crushed garlic too, a matter of choice.
3. Preheat the AGA grill pan on the hotplate or hob and when hot grill the kebabs on one side until the prawns turn pink, turn over and cook the other side.
4. Serve sprinkled with chopped coriander and a good squeeze of lime.
