AGA Steamed Marmalade Pudding

Ingredients
- 65g butter
- 65g sugar
- Grated zest of 1 orange
- 1 large egg, beaten
- 75g self raising flour
- 1 tbsp marmalade
For the sauce
- 1/2 tbsp marmalade
- 75g creme fraiche or 75ml cream (double, whipping or single)
- Juice of the orange
- Sugar to taste
- A slosh of orange liqueur (optional)
- 1 litre ovenproof pudding basin, buttered
- Greaseproof paper, one piece cut to fit inside the top of the pudding basin and a second to fit over the top.
- Foil to cover and string to tie.
Method
Cream together the butter and sugar and mix in the beaten eggs then fold in the flour.
Put the marmalade in the bottom of the pudding basin and spoon the pudding mixture on top. Place a disc of greaseproof paper on top of the mixture. Cover the basin with a double layer of greaseproof paper and foil and tie with string, making a handle out of the string too.
Place the pudding basin in a pan and pour boiling water around to come halfway up the pudding. Put a lid on and simmer on the boiling or simmering plate fo 15 mins. Transfer he whole pan to the simmering one and steam for 90 mins.
Make the sauce by heating all the ingredients together. Taste and add sugar as needed.
When the pudding is cooked, remove the foil and greaseproof paper, turn out on to a serving plate and serve with the warm sauce or just some cold pouring cream.
