Try Damian's recipe for Slow Roasted Shoulder of Plains Paddock Lamb

Damian Sandercock grew up in restaurants. His parents were cooks and his grandparents were caterers. After completing his cookery apprenticeship in Adelaide, he worked in fine dining restaurants across Australia and the world before moving to Kyneton in Central Victoria with his family. Here, Damian saw a need for a quality, family friendly restaurant, so in 2006 he built a wood-fired oven and opened Pizza Verde. The restaurant was an immediate hit.

But it was on a trip to France in 1999 where Damian stumbled across what was to become his true passion. In a small shop in the Latin Quarter, he picked up a can of Rillettes du Canard - paired with a bottle of new season Beaujolais and fresh bread - it was simple and delicious and the beginning of a new food journey.

Damian collected books, talked to experts, translated recipes and experimented with methods. He found Jane Grigson's 1967 classic 'Charcuterie and French Pork Cookery' in a second hand bookshop and began indulging in the art of charcuterie.

Piper Street Food Company is not yet three years old but has managed to cement itself as one of the region's most respected brands. Supplying a range of terrines, rillettes, pâtés, pies and sausages to over 60 quality delis, foodstores, caterers and restaurateurs around Victoria, it is now also available in Sydney through Hudson's Meats and Jones the Grocer.

All of the products are hand crafted and based on traditional methods and recipes. Each of the ingredients has its own provenance; whether it's free-range pork shoulder from Western Plains Pork, organic herbs & garlic from Angelica Organic Farm, or Mt Zero Pink Lake salt.

The quality and integrity of the products has been recognised with numerous gold and silver medals from the Royal Melbourne Show Fine Food Awards 2012 & 2013, a delicious Magazine medalists award, and most recently, the 2013 Winner's Trophy from the delicious Magazine Producers Awards for his Pork Rillettes (Paddock/Artisan Category).

Sharing his knowledge and passion for charcuterie is also important to Damian. He regularly hosts demonstrations at regional food events such as the Regional Producers Day at The Lakehouse, Glenlyon Food Fayre and the Hanging Rock Harvest Picnic. Piper St Food Co will soon be launching the newly expanded shop at Kyneton, where travelers and locals can sample his incredible products, attend cooking classes, support regional tourism and promote local food & wine producers and farmers.
